Cabbage salad

This cabbage salad is a household favourite during the winter months. It makes the perfect tangy and sweet accompaniment to a wide variety of dinner dishes and takes very little time to prepare. As well as kale, you might like to experiment with other types of cabbage, such as Brussels sprouts or cauliflower.

7–8 leaves of kale or similar cabbage
1 carrot
1 small tart apple, such as Elstar or Cox’s Orange Pippin
4 tbsp olive oil
2 tbsp apple cider vinegar
Sea salt and freshly ground pepper

Instructions

The salad

First, remove the stalks from the kale and tear the leaves into small pieces. Peel the carrot and then cut it into rough chunks. Cut the apple into rough chunks as well.

Place all the ingredients, including the kale, carrot and apple pieces, into a food processor along with the oil, vinegar, salt and pepper. Process the mixture until it has a texture similar to couscous. Once the mixture is ready, season to taste with salt, pepper and apple cider vinegar.

If you do not have access to a food processor, you can alternatively chop each ingredient very finely individually using a sharp knife.

Arrange the finished salad in a bowl and serve.
