• Boil the whole oranges in plenty of water for 1–1¼ hours until tender. Leave them to cool.
• Remove the blossom end, cut the oranges in half and remove any seeds.
• Scrape out the flesh. Chop the peel very finely (using a mincer if necessary). Blend or chop the pulp finely.
• Scrape the seeds from the vanilla pod and place the orange, sugar and vanilla in a saucepan.
• Bring to the boil and simmer for 5–10 minutes.
• Season to taste with lemon juice and add lemon zest. Adjust with a little extra sugar if necessary.
• Bring to the boil again for approx. 5 minutes and pour the boiling jam into sterilised jars. Screw on the lids.
