Red cabbage

No Christmas dinner is complete without the essential red cabbage. Make it yourself – it’s surprisingly easy, and with this recipe you’ll undoubtedly end up with the world’s best red cabbage. It’s a good idea to prepare the red cabbage a couple of days in advance and keep it in the fridge.

1 small organic red cabbage (or half a large one)
150 ml balsamic vinegar
300 ml red wine
The zest and juice of 2 oranges
250 ml honey
2 bay leaves
1 cinnamon stick
1 star anise
5 whole allspice berries
5 whole cloves
Approx. 2 tbsp salt
Freshly ground pepper

Instructions

Method

Start by removing the outer layers of the red cabbage and cutting it into thin strips or chopping it finely, depending on your preference.

Next, sauté the cabbage over a high heat in a large pan with a little fat in the bottom (you may need to do this in batches if you have a lot of cabbage).

Crush the star anise, allspice and cloves in a mortar. Then add the spices to the cabbage along with the bay leaves, cinnamon stick, salt, pepper, red wine, honey, balsamic vinegar, orange juice and zest. You can add a little duck fat if you wish.

Leave the cabbage to simmer, then let it cool before transferring it to sterilised jars.
